Barbecued Jumbo Shrimp

Shell and devein shrimp. Place in a shallow dish. Combine Barbados Rim BBQ sauce, Mulitas marinade, garlic, and cilantro; pour over shrimp. Cover and refigerate at least 1 hour, turning shrimp occasionally in the marinade. Soak four long wooden skeweres in cold water for one hour.

Preheat broiler to medium-hot or light the grill. Drain shrimp; reserve a small portion of the marinade. Thread shrimp onto the skewers and brush with marinade. Discard remaining marinade. Broil or grill 10-15 minutes each side or until shrimp turn pink. Garnish with lettuce and lime. 3-4 servings, 20-30 minutes preparation time.
