Chipotle-Barbeque Roast Chicken

Preheat over to 350 F. Lightly oil and flour a 9 1/2 x 5 x 2 3/4 inch loaf pan. Sift together flour, baking powder, salt and nutmeg. With an electric mixer eat together oil and sugar. Beat in eggs, on at a time; stir in flour mixture alternately with milk. Add vanilla. Fold in pineapple, then pour batter into prepared pan. Sprinkle top of loaf with sugar. Bake for 45 to 55 minutes or until a tester inserted into center comes out clean. Let bread cool in pan on a rack for 10 minutes, then turn it out onto the rack to cool completely. Makes 1 loaf.
